Playa opens today on Beverly Boulevard

Playa, chef John Sedlar’s latest foray into modern Mexican cooking, opens today in the former Grace restaurant space on Beverly Boulevard. The menu is a mix of mostly small and a few big plates, all to share. You’ll find more than a couple of Sedlar’s maize cakes -- extra-thick, fresh-masa tortillas made with various spices, seeds and flowers, topped with, for example: fresh burrata, salsa verde, sal de Colima, amaranth and mojito mint olive oil; or a 63-degree egg with black trumpet mushrooms, truffle cheese and pan-seared potato; or pork belly confit with chile-lime jicama, mango pickles and raita espuma.

Other dishes, which recall Sedlar’s downtown restaurant Rivera, include grilled octopus with palm hearts and oven-dried cherry tomatoes; fideos of linguini caseros with saffron, caviar and fresno chiles; and chile-rubbed pork tenderloin with salsa verde, pea tendrils and manzana. Prices are $7 to $26.

Don’t skip dessert, such as the pastel cafe: mocha sponge with espresso creme, toffee honeycomb and Colombian chocolate ice cream. Meanwhile, cocktails -- currently emphasizing rum, tequila and cachaca -- are the creations of Rivera’s Julian Cox.
