Nutrition Can Be Tasty in Galletas
Nutrition awareness comes in many forms. At UCLA, the Student Nutrition Awareness Committee (SNAC) recently emphasized the need by staging a recipe rivalry among dining halls on campus.
Nutritious snack recipes submitted by inter-hall finalists for the grand prize of $100 last week were judged by student government representatives, food service managers, cooks and SNAC members. The winning snack by a landslide was submitted by Kim Lede of Sproul Hall for Galletas--chock-full of oats, cereal, raisins, carob chips, walnuts and coconut. And they are great. GALLETAS
1 cup butter or margarine
1/2 cup granulated sugar
1 cup brown sugar, packed
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 cups cornflakes
2 cups oats
1 cup raisins
1 cup carob chips
1 cup chopped walnuts
1/2 cup shredded coconut
Cream butter with sugars until fluffy. Beat in eggs and vanilla. Sift in flour, baking powder and baking soda. Mix well. Mix in cornflakes, oats, raisins, carob chips, walnuts and coconut.
Drop by rounded teaspoons 1 inch apart onto baking sheet. Bake at 350 degrees 10 to 12 minutes. Makes 7 dozen.
