Turkey South of the Border
Leftover turkey tastes great in Mexican-style foods. Here are some suggestions for giving the turkey a south-of-the-border touch.
Use leftover roast turkey, shredded or cubed, in Tex-Mex-style casseroles. To prepare, layer tortilla strips, sliced cooked turkey and shredded Jack cheese in a baking dish. Moisten with a mixture of tomato sauce and canned enchilada sauce. Repeat layers. Cover with foil and bake at 350 degrees about 25 minutes or until hot. Top with sour cream and chopped green onions.
Or brown leftover roast turkey in a greased skillet and combine with canned chili and beans. Make layers of buttered corn tortillas, chili mixture and shredded Jack cheese. Top with tomato sauce and bake at 350 degrees about 25 minutes.
