New Delhi-born Jaffrey is known for her Indian cookbooks and television shows on Indian cookery. Now she has branched out into the cuisines of Southeast Asia, Hong Kong, Japan and Korea, producing this book in conjunction with a BBC cookery series that is scheduled to be shown in the United States next spring.

In an interview earlier this year, Jaffrey expressed her concern about the loss of great cookery traditions and described her attempts to persuade Asian women to record their dishes. This book was researched with contemporary sources--hotels, restaurants and caterers as well as individuals and is laced with photographs of places, people and food.
