Chicken Salad: Hot and Fast
This meal-in-a-dish spicy chicken salad features sliced, broiled chicken breast atop a bed of shredded lettuce. It’s low in sodium and calories, and it takes less than an hour to prepare.
LIME AND HOT
PEPPER CHICKEN
SALAD
3 tablespoons low-sodium light soy sauce
1/2 teaspoon grated lime zest
Juice of 1 lime
1/2 teaspoon hot pepper sauce
4 chicken breast halves, boned
1/3 cup oil
4 cups shredded lettuce
Combine soy sauce, lime zestand juice and pepper sauce. Remove and pour 2 tablespoons soy sauce mixture over chicken in large plastic bag. Press air out of bag. Close top securely. Turn bag over several times to coat pieces. Refrigerate 30 minutes. Turn bag over occasionally.
Meanwhile, blend remaining soy sauce mixture with oil in small bowl with wire whisk or fork. Line serving platter or individual serving plates with lettuce.
Remove chicken from marinade and broil 7 minutes on each side, or until tender. Slice chicken crosswise and arrange over lettuce. Stir dressing and sprinkle over chicken and lettuce. Serve with remaining dressing. Makes 4 servings.
