ROLL ‘EM: Gangsta rapper Ice-T, now earning raves for his portrayal of a street-wise cop in “New Jack City,” is now making his video directorial debut with “Daddy Rich,” a new song from Hijack, a British gangsta-rap group Ice-T discovered and signed to Sire Records. . . . Meanwhile Spike Lee is directing “Willing and Able,” a new Prince song from his upcoming “Diamonds and Pearls” album. . . . While he’s waiting to announce his distribution deal with Warner Bros. Records, Def-American chief Rick Rubin has been moonlighting as a producer for Hollywood/Basic Records. The label has just released Rubin’s rap-style remix of Queen’s “We Will Rock You,” with scratch deejay assistance from Afika Islam and rhythm aid from the Red Hot Chili Peppers. On deck: Delicious Vinyl’s Mike Ross is doing a hip-hop remix of Queen’s “Another One Bites the Dust.” . . . And speaking of Delicious Vinyl: The label’s new hip-hop hot shot, Jesse Jaymes, is making his local debut on the college frat-house circuit. He appears Thursday at UCLA’s ZBT house, with dates upcoming on the UCSB and the University of San Diego campuses. Somehow the gigs sound appropriate: Jaymes’ upcoming album features such beer-blast material as “Shake It (Like a White Girl),” “College Girls Are Easy” and “$55 Motel.”
