Substitution: Stone Phillips will make his debut as an anchor for NBC this week when he subs for vacationing Bryant Gumbel on “Today.” It’s a warm-up for Stone, who will co-anchor NBC’s new magazine, “Dateline NBC,” with Jane Pauley starting March 31.
