SPECIAL TO THE TIMES

Bristol Farms and the Saddle Peak Lodge will host a special prix-fixe dinner on April 29, featuring wines from S. Anderson Vineyard.

For $90, you can choose from among three appetizers and three entrees, each served with an S. Anderson wine.

The appetizers are potato pancakes with salmon cured in the Scandinavian aperitif aquavit served with creme fraiche; oven-dried tomatoes with fresh mozzarella; and rabbit-confit-filled purses dipped in a mango bigarade. A bigarade is a sauce with origins in the south of France and Spain; it is rarely seen on American menus.

The restaurant will serve different 1995 S. Anderson Chardonnays with the appetizers and the quail, a 1992 S. Anderson brut Champagne with the snapper, and a 1993 S. Anderson Cabernet with the ostrich.

For dessert--a phyllo-dough purse filled with mascarpone and surrounded by sorbet and fresh fruit--diners will have a 1992 S. Anderson rose.
