Super Bowl Beans

There are plenty of high-fat bean dishes served on Super Bowl Sunday. Here is an alternative. It’s a black bean salad made with fresh vegetables and fruit. The dressing has no oil, only fresh lime juice and toasted cumin.

And what’s the Super Bowl without chips? These Chili Lime Chips that accompany the salad are baked instead of fried.

Although the salad makes a nice light meal when served with the chips, you can serve grilled shrimp with it. Or if you must have sausage, try one of the well-flavored low-fat turkey sausages on the market.

Super Bowl Black Bean Salad

Active Work Time: 10 minutes * Total Preparation Time: 1 hour 10 minutes * Vegetarian

1 pound dry black beans

1 teaspoon cumin seeds

1 cup minced red onion

2 serrano chiles, minced

2 large cloves garlic, minced

1 tomato, seeded, chopped

1/2 cup chopped cilantro

Juice of 2 limes

1 teaspoon salt

2 mangoes, peeled, diced

* Cook black beans in water to cover until tender, about 1 hour. Drain. Rinse under cold water.

* Meanwhile, toast cumin seeds in dry skillet over medium-high heat just until fragrant, about 3 minutes. Let cool, then crush seeds and set aside.

* Toss drained beans with onion, chiles, garlic, tomato and cilantro. Stir in lime juice, cumin seeds and salt. Gently stir in mango.

Chili Lime Chips

Active Work Time: 5 minutes * Total Preparation Time: 12 minutes * Easy

6 flour tortillas

Nonstick cooking spray

Juice of 1 lime

2 teaspoons chili powder

Salt

* Cut each tortilla into 8 wedges and arrange in single layer on baking sheet lightly sprayed with nonstick cooking spray.

* Brush each wedge with lime juice then lightly mist tortillas with nonstick cooking spray. Sprinkle chili powder and salt to taste on chips.

* Bake at 400 degrees until chips are browned and crisp, 7 to 8 minutes.
