Scientists Play Down Food Cancer Scare

Fatty fried foods such as potato chips may contain a substance that can cause cancer in animals, but the levels are not high enough to increase the risk for humans, researchers said.

Swedish scientists sparked a scare last year when they found high levels of acrylamide, a possible human carcinogen, in high-carbohydrate foods.

But new research at the Harvard School of Public Health and the Karolinska Institute in Sweden found no link to several cancers. “There’s less to worry about than was thought,” said Harvard’s Dr. Lorelei Mucci.
