Former Sqirl chef de cuisine Javier Ramos pops up at Trois Familia

Javier Ramos, formerly chef de cuisine at Sqirl, will be hosting pop-ups twice a week beginning Tuesday at Trois Familia, the Mexican-French restaurant in Silver Lake run by chefs Jon Shook, Vinny Dotolo and Ludo Lefebvre.

Ramos says the menu will be seasonal and vegetable-heavy, with nods to his time working in Chicago — a hanger steak with giardiniera pays homage to the Italian beef sandwich. He says via email that a priority during this residency is “working with farmers I’ve been connected with for well over a decade now and doing our best to show how vital they truly are to the food we will be cooking.” Helen Johannesen, the beverage director for restaurants in the Jon & Vinny’s group, will be lending a hand with wine.

Ramos will be cooking every Tuesday and Wednesday evening, for dinner only, through the end of March. Menu updates can be found on Ramos’ Instagram account. Reservations are taken through Resy and walk-ins are accepted.
