Fleming’s to host wine dinnerK

Fleming’s Prime Steakhouse & Wine Bar in Newport Beach will host a

wine dinner 6:30 p.m. Feb. 15 featuring menu items paired with specific

wines.

Steve Holmes, a wine expert and representative for Clos du Bois, will

lead the dinner as he explains the art of pairing wines with food during

the five-course, prix-fixe meal.

The first course, a selection of cheese hors d’ouevres, will be served

with a 2000 Sauvignon Blanc. A butternut squash soup will be paired with

a Calcaire 1999 Chardonnay. A smoked trout salad with red onion

vinaigrette will accompany a 1999 reserve Chardonnay. A rack of lamb

entree with potato croquette and lemon spinach will be paired with a 1998

reserve Shiraz. Finally, a hot Godiva chocolate cake will finish off the

evening with a 1998 reserve Cabernet.

Fleming’s is at 455 Newport Center Drive, Newport Beach. The cost is

$75 per person.
