TIP OF THE WEEK

Want to brew your tea properly? The Tea Council of the U.S.A. gives

these helpful hints for creating the perfect pot.

* Always use a teapot preheated with scalding water. Do not make it an

open cup because the temperature of the water drops so rapidly in a cup

that only a portion of the tea flavor is extracted.

* Use rapidly boiling water, and pour it directly over the tea leaves.

* Use a proper amount of tea -- one tea bag or one teaspoon of tea for

each cup.

* Steep the tea (never boil) for no less than three minutes, and no

more than five minutes.
