Mexico: Cinco de Mayo at Los Cabos resort restaurant is sweet

The Cinco de Mayo holiday is celebrated throughout the United States and Mexico with various fiestas, but only in Los Cabos, Mexico, will celebrants eat, drink and make merry this year with a 492-foot-long pan dulce.

The giant confection, containing 600 eggs, 441 pounds of flour and 99 pounds of sugar, is being baked by chef Manuel de Luca to mark the relaunching of the De Cortez Restaurant at the Sheraton Hacienda del Mar Golf & Spa Resort.

“We embrace the challenge of finding new ways — like this pan dulce — to surprise and delight our guests,” said Renato Mendonca, general manager of the resort, adding that the plan is to serve the iced sweet bread ”with hot chocolate, of course.”

The pan dulce -- a chewy, Mexican bread with a sweet, decorative topping – will be served to hotel guests, Cabo visitors and the community.

The beachfront Sheraton Hacienda del Mar resort has five restaurants and five bars, four infinity and cascading swimming pools, the Cactus Spa and Fitness Center, and a wedding chapel.

De Cortez Restaurant is relaunching with an updated look and menu. “We are excited to introduce our new De Cortez menu,” Mendonca said. “It features more fusion dishes and is focused on celebrating the best of the region’s bounty, such as farm-fresh produce from local suppliers, seafood from the Pacific and the Sea of Cortez and meat, grilled over mesquite coals, using classical techniques.”

Cinco de Mayo — or the fifth of May — commemorates the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867).
